Chholas

  • 2 cups chickpeas (uncooked)
  • 1 tbsp oil
  • 1 small onion chopped
  • Ginger 1″ sliiced
  • Green chillies 4-5
  • Sat
  • Amchur (raw mango powder)- about 1 tsp
  • Cilantro

Method

  1. Soak chickpeas overnight
  2. Pressure cook chickpeas with salt. 15 mins after 1st whistle
  3. Heat oil
  4. Add onion and ginger, and fry slightly (light brown)
  5. Throw in the chickpeas, add salt and Amchur
  6. Let it cook. Mash some of the chickpeas so the consistency is thick
  7. Garnish with sliced round onions, tomatoes, plenty of ciltraro and wedge of lime
