For 4 people
For chicken marination
- Chicken 450g/ 1 lb
- Turmeric powder 1/2 tsp
- Black pepper powder 1/2 tsp
- Lemon juice 1 tablespoon
- salt
2 small onions (or 1 large) thinly sliced
Ginger crushed/mince 1.5 tsp
Garlic crushed/mince 1.5 tsp
Green chillies (slit length wise) 4suouoy
Whole black pepper 1 tablespoon
Garam masala 1 tsp
Fennell powder- 1/2 tsp or 1 tsp fennel
Curry leaves- 7-8
Oil 2 tbsp (olive, mustard)
- Marinate chicken and keep for 30 mins
- Crush whole black pepper
- Heat oil in wok. Throw in curry leaves. Add onions. Fry until light brown
- Add ginger garlic and green chilli
- Saute nicely- you should start getting the smell of masala
- Add garam masala, fennel, black pepper and keep sautéing. Until it looks nice and brown
- Add chicken and coat nicely with masala
- Cover and cook- do not add any water. About 20 mins or until chicken is done
- Add a little bit of oil and sauce further
- Serve
