Black Pepper Chicken Kerala style

For 4 people

For chicken marination

  1. Chicken 450g/ 1 lb
  2. Turmeric powder  1/2 tsp
  3. Black pepper powder 1/2 tsp
  4. Lemon juice 1 tablespoon
  5. salt

2 small onions (or 1 large) thinly sliced

Ginger crushed/mince 1.5 tsp

Garlic crushed/mince 1.5 tsp

Green chillies (slit length wise) 4suouoy

Whole black pepper 1 tablespoon

Garam masala 1 tsp

Fennell powder- 1/2 tsp or 1 tsp fennel

Curry leaves- 7-8

Oil 2 tbsp (olive, mustard)

  1. Marinate chicken and keep for 30 mins
  2. Crush whole black pepper
  3. Heat oil in wok. Throw in curry leaves. Add onions. Fry until light brown
  4. Add ginger garlic and green chilli
  5. Saute nicely- you should start getting the smell of masala
  6. Add garam masala, fennel, black pepper and keep sautéing. Until it looks nice and brown
  7. Add chicken and coat nicely with masala
  8. Cover and cook- do not add any water. About 20 mins or until chicken is done
  9. Add a little bit of oil and sauce further
  10. Serve
