500 grams lady’s fingers (bhindi), cut into thin strips

1 teaspoon chaat masala ½ teaspoon dried mango powder (amchur)

1 teaspoon red chilli powder

1 teaspoon garam masala powder

Salt to taste

Oil for deep-frying

4 tablespoons gram flour (besan)

Juice of ½ lemon

  1. Put lady’s fingers strips in a bowl. Add chaat masala, dried mango powder, chilli powder, garam masala powder and salt and mix. Set aside to marinate for 10 minutes.
  2. Heat sufficient oil in a kadai.
  3. Add gram flour to marinated ladyfinger strips and mix till evenly coated.
  4. Put the marinated lady’s fingers strips in hot oil and deep-fry till golden brown and crisp. Drain on absorbent paper.
  5. Put fried ladyfinger strips in a serving platter, add lemon juice, mix well and serve hot.
