Evelyn’s green curry

You will need

500 g chicken breast fillet

3 cups coconut milk

3 tbsp oil

1/4 cup green curry paste

1 cup coconut cream

khaffir lime leaves

green beans

2 tbsp fish sauce

1 teaspoon brown sugar

1/2 teaspoon sweet basil leaves

Sliced red chillies thinly sliced

Sweet basil for garnish

Process

  • Boil chicken in 1 cup of coconut milk over medium heat for 8 minutes
  • Put oil in a pan and add the green curry paste. Cook until fragrant
  • Add the coconut cream and cook until oil surfaces
  • Add the khaffir lime leaf and put in the remaining coconut milk
  • Cook on medium heat for a bit
  • Put in the chicken, add the green beans and basil leaves fish sauce and sugar
  • Give it a boil and you are done
