1 medium piece ginger

1 large onion

10 cups water

1.5 kg beef with bones (or chicken legs)

3 pieces star anise

1 cinnamon stock

250 g rice noodles

1/4 cup thinly cut leeks

1/2 cup ngo gai leaves

1/2 cup chopped cilantro

  1. Grill onion and ginger till skin is burnth
  2. In a pan, combine water and meat and bring to boil (skim frequently to remove residue)
  3. Add salt ginger onion star anice cinnamon and salt
  4. Cook for an hour
  5. Strain
  6. Blanch rice noodles and bean sprouts in boiling water and arrange in soup bowl
  7. Top with slides onion, cilantro, leeks
  8. Pour the soup and add freshly ground pepper
  9. Add lime
