Royston cookies

Royston Wales Chocolate chip, Coconut and Oat cookies

150g salted butter, softened

200g light brown sugar

1 egg beaten

2 tsp vanilla extract

4 swirls of golden syrup

125g plain flour

1 tsp baking powder

200g rolled oats

200g desiccated coconut

175g chocolate chips

Preheat oven to 180c

Cream butter and sugar

Add egg. golden syrup, vanilla extract. Beat until smooth

Sift in flour and baking powder and mix

Add oats, choc chips and desiccated coconut and mix it with your hands

Roll into golf ball sized balls. Flatten out roughly and place on 2 baking trays lined with baking powder

Cook for 12 minutes and check for signs of burning

Move bottom and top trays around and bake for further 4-7 minutes. They should be golden

Cool on a wire rack
