Indi’s pineapple upside down cake

2 tbsp Butter/ Marg

6-7 pineapple rings

1/2 cup packed brown sugar

1/2 cup butter/ margarine

1/2 cup granulated sugar

2 beaten eggs

1 tbsp vanilla

1.5 cups flour

2 tsp baking powder

1/2 tsp salt

2/3 cup milk

Preheat over 350/180

Melt first set of butter in a 8X8 pan (don’t use springboard or round tin with loose lower base tin)

Arrange pineapples

Sprinkle brown sugar

Cream second butter plus sugar

Add eggs and beat.

Add vanilla

Mix flour, baking powder and salt

Add flour mixture in parts alternating with the butter mixture alternating with milk in 2 parts

Bake 25 mins. Let stand for 10 mins. Loosen edges and invert.

Serve with whipped cream
